Description
From the vinification of 100% pure Merlot grapes. The origin is that of the company vineyards located in Nimis, within the company limits. Harvest takes place strictly by hand. The vinification requires that the Merlot grapes, harvested at the right ripeness, are partially dried for about 8 weeks. A technique, that of passitura, characteristic of La Roncaia: the aim obtaining a more structured, full-bodied and fruity wine. The grapes are de-stemmed, but not pressed, and fermented in stainless steel tanks. After a maceration of about 25 days, the product is drawn off and placed in barrique. Here the wine remains for 18 months during which it slowly matures. Bottling is followed by further refinement which makes the wine even more mature and balanced.
