Description
Full de-stemming and partial crushing depending on the varietal, parcel and level of ripeness. A proportion of the Syrahs and Cinsaults undergo pre-fermentation maceration at cold temperatures (8°C) for 4 days. The other varietals are vatted and fermentation takes place at temperatures of 22 to 24°C in order to ensure a slow and gentle fermentation for optimum extraction of the aromas and tannins. Extraction is carried out mainly by gentle pumping overs in order to extract the softest tannins possible. 12 months in truncated French oak vats.
Tasting Notes
Deep cherry in color with elegant aromas of fresh red fruits and floral hints, lifted by a touch of pepper. The palate is balanced and refined, showing raspberry, redcurrant, and blueberry with subtle notes of licorice and blossoms.
