Description
Aged for around 6 months, up until springtime, on its fine lees in egg-shaped concrete vats (80%) and 300 L French oak barrels (20%). This cuvée can be enjoyed in its youth to appreciate its freshness, fruitiness and salinity or otherwise kept for several years in the cellar during which time it will develop floral, mineral notes and a hint of petrol (up to 20/25 years).
Tasting Notes
The nose expresses intense aromas of fruits with white flesh and yellow flesh (pear, quince, peach), then develop notes of acacia that bring a beautiful finesse. Discreet notes of toasted dried fruit are a sign of the solar vintage. The palate is intense as the vintage requires. The limestones have made it possible to maintain a great drinkability with a saline finish that contrasts with a generous attack in the mouth. In the finish, small bitters give a unique dimension to the tasting.
Serving Suggestions
LOratoire des Papes white pairs exquisitely with monkfish tail infused with saffron, scallop tartare, or grilled lobster. It also proves a sublime match for a selection of fine hard cheeses.
