Description

Palomino grapes are gently pressed to obtain the delicate "mosto yema", while Pedro Ximenez is processed separately. After fermentation, Palomino is fortified to 18% ABV and Pedro Ximenez to 15.5% ABV. Both wines are aged in American oak using the traditional solera system under controlled oxidation. After blending, the wine is matured in the Solera 1847 system for an average of 8 years.

Tasting Notes

Deep mahogany color with aromas of raisins, vanilla, and oak. Smooth and well-balanced on the palate, featuring notes of figs, raisins, caramel, and wood, with a subtle nutty finish.

Serving Suggestions

Served very cold, either in the traditional Jerez wine tasting or in a high glass, Ideal as an aperitif with cheese or with desserts that are not excessively sweet, based on ice cream or fruit, as a dessert wine it accompanies apple pie very well.
Serving temperature 12-14°C | Ideal storage temperatures: Red Wine: 12 °C < 19 °C, White Wine: 8 °C < 12 °C, Champagne: 5 °C < 8 °C. | Wine is best stored in a dark room, vibration-free and with humidity under 70%
