Description
Gonzalez Byass Nectar Pedro Ximenez is a sweet wine made from Pedro Ximenez grapes grown in the producer's own vineyards. After harvest, the grapes are sun-dried using the traditional soleo method to concentrate sugars. The grapes are then gently pressed to produce a very sweet must, which is lightly fermented and fortified to 15.5% ABV. The wine is aged for an average of 9 years in American oak casks using the traditional solera system.
Tasting Notes
Deep ebony color with intense concentration. Rich aromas of raisins, figs, dates, honey, syrup, and candied fruits, complemented by subtle toasted notes. Full-bodied, velvety, and luscious on the palate, balanced by refreshing acidity and finishing long and smooth.
Serving Suggestions
Served slightly cold, either in the traditional Jerez wine tasting or in a tall glass, Nectar is ideal as a dessert in itself. It is recommended to always keep cold. Pairs beautifully with vanilla ice cream, cakes, and caramel-based desserts, and can also be used as a rich topping for ice cream.
