The selection of base wines is made among different grape varieties and depending on the vintage characteristics, in order to obtain the desired style. The grapes that can be used in variable proportions are : Airen, Ugni Blanc, Durello and Chardonnay. Temperature-controlled natural fermentation in vat. 3 months' ageing on lees with daily stirring.

This wine will be great with all fishes and seafood but also with white meats. It will also be a perfect ingredient in a Spritz cocktail.
Serving temperature 6 - 8°C | Ideal storage temperatures: Red Wine: 12 °C - 19 °C, White Wine: 8 °C - 12 °C, Champagne: 5 °C - 8 °C. | Wine is best stored in a dark room, vibration-free and with humidity under 70%.

The history of Charles de Fere is the story of one family's love of good food and passionate commitment to the best traditional sparkling winemaking methods. Born into a long-established Champagne winegrowing family, Jean-Louis Denois opened a sparkling winery at Fere-en-Tardenois, to the North-East of Reims in 1980. His idea was to create a Boutique winery to make exceptional sparkling wines based on five generations' savoir-faire and skills.
