Tasting Notes
After the piñas are cooked and cooled, they are crushed to extract the sweet juice, which is then fermented with a special strain of yeast. This fermentation process contributes to the distinctive flavor profile of Padre Azul Reposado.
After fermentation, the liquid is double distilled in copper stills to achieve exceptional purity and smoothness, then aged for a minimum of eight months in American oak barrels to develop a rich and complex character.
