Gin & Tonic Sorbet with Lemon and Thyme

We thought so. Let's try a beautifully refreshing gin & tonic sorbet. To make it a whole lot more summer-friendly, let's work with ingredients like lemon and thyme that uplifts any drink or dish.

Let's use Sipsmith London Dry Gin for this recipe. It's zesty, smooth and aromatic with flavours of lemon tart and orange marmalade- which we guarantee will take your G&T sorbet to the next level.

Ingredients

  • 60ml of Sipsmith London Dry Gin

Steps

  1. Take a small pot to begin boiling the water and sugar. Boil it until the sugar has completely dissolved (same as for honey) Take it off the heat.
  2. Add the thyme stalks to the pot and just lightly smash them to bring out the flavours of the thyme.
  3. Let it cool for a while. This allows the thyme to really bring out its aroma. Then add lemon juice, zest of the lemon and Sipsmith London Dry Gin.
  4. Give it a good stir. Transfer the mixture into a shallow pan and freeze it. Freeze it until it's semi-solid.
  5. Once it is semi-solid, take a fork, fluff it a little, then place it back in the freezer and freeze it till it's firm. Put it into a blender and blend it till it's smooth.  
  6. Your gourmet sorbet is ready! Store it in an airtight container. Freeze until you are prepared to indulge. Scoop and enjoy!
