Description
The wine is fermented cool over a two-week period. Selected parcels were fermented on house select French Oak. Once the ferment is complete, the wine is rested and matured for 5 months on fine yeast lees to build palate weight. This wine is suitable for both vegan and vegetarian preferences.
Tasting Notes
Pale straw with a lime green rim in colour. Bright, ripe peach and melon flow across a fresh, modest palate. Prudent oak usage allows the fruit to shine while piquing interest with a sublime caramel cashew oak finish.
Serving Suggestions
Grilled whole halibut with lemon and caper sauce.
