We harvested the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. In this vintage, we added a touch of Zinfandel to help balance the fruit perception and Cabernet to round out the structure with a fuller body. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak. Dark Fruit, Black Pepper, Dark Chocolate.
Our 2019 Apothic Dark brings daring depths of dark fruit together for a bold red blend. Rich layers of blackberry and bold tannins lead the blend from the Petite Sirah, followed by notes of boysenberry pie, black cherry and plush tannins from the Teroldego. Bright, tart accents of pomegranate and dusts of spice add dimension while Zinfandel brings in a touch of licorice. The Zinfandel and Cabernet Sauvignon balance the dark fruit with some red and black currant characters, and both impart a more balanced, plush mouthfeel.
